Quick and easy marinade and very tasty! 1 (8 pound) Buffalo prime rib roast 8 cloves garlic, minced 2 tablespoons olive oil 2 teaspoons salt 2 teaspoons ground black pepper 2 teaspoons dried thyme Place the roast in a roasting pan with the fatty side up. In a small bowl, mix together the garlic, olive oil, salt, pepper, and thyme. 1 lime, juiced1 tablespoon minced garlic1 teaspoon dried oregano1 teaspoon ground cumin2 tablespoons finely chopped canned chipotle peppers in adobo sauceadobo sauce from canned chipotle peppers to tastesalt and pepper to taste In a small bowl, mix the lime juice, garlic, oregano, and cumin.
