The most flavorful cut on the Elk, ideal for braising or stews. Chuck roasts are cut from the upper front shoulder of the animal, spending a lot of time in use while developing dense, deeply flavorful muscle. Heat, liquid and time (or an Instapot!) combine to break down the roast and connective tissue, resulting in rich, fall apart and fork tender meat. Comes in 2-3lb, 3-4lb and 5-6lb roasts.
