Venison Meat Smashed Tacos & Mango Salsa

Ingredients

    • 1 lb ground Venison

    • OR 1 lb ground elk meat

    • OR 1 lb ground bison meat

    • 2-4 tbsp taco seasoning

    • Salt and pepper to taste.

    • 6 small corn or flour tortillas

    • Oil or fat of choice for the griddle

    • 2 ripe mangos, peeled and diced

    • ½ small red onion, finely diced
    • 1 jalapeño, minced (remove seeds for less heat)

    • 1 sweet red pepper diced

    • 1 clove of garlic minced

    • Juice of 2 limes

    • 1 tbsp white wine vinegar

    • Handful of chopped cilantro and/or parsley if you don’t love cilantro

    • Salt and pepper to taste

    • ½ cup plain yogurt

    • 1 tbsp lime juice (more or less to taste)

    • ½ tsp sea salt

    Directions

      1. Gather and prep all the salsa ingredients.

      2. Add all ingredients to a bowl and mix well. Be sure to taste and adjust the flavor to your liking. Add a splash more vinegar if you like it tangy or a small amount of honey if you like it sweeter (or both!) Set aside.

      1. Combine the yogurt, salt and lime juice, stir well and set aside

      1. Preheat the Blackstone griddle or cast iron skillet over medium-high heat until very hot. Lightly oil the surface.

      2. Season the ground venison with the taco seasoning, salt and pepper and mix well. Form loose 2–3 oz balls of ground venison. Keep them loosely packed for better texture.

      3. Place each meatball onto the hot skillet, cover it with a tortilla and then smash it flat with a heavy spatula, or griddle press (a plate or small pan works too) Cook for 1.5-2 minutes until a crust forms, and they are easy to flip.

      4. Flip carefully, and cook another 1–1.5 minutes until just done—don’t overcook.

      5. Transfer to plates and pile on the salsa and yogurt sauce.

      6. Fold in half and ENJOY!
