Our Elk is extremely lean and should be cooked or prepared with care and consideration to ensure proper enjoyment. Never cook Elk steaks past medium rare (burgers have a little more leeway), and please make sure all steaks rest AT LEAST 5 min before enjoying. Brats and Italian sausages are best simmered in liquid (preferably beer) before finishing over direct heat to retain moisture.

    New favorite thing

    I had never had Elk and I live far away from anywhere I could hunt for them, this box introduced me to something new. The steaks are perfect and the burgers maybe my family happy will definitely be buying from here again.
