Quick, easy and decadent. This bison sausage dish comes together in about 30 minutes but tastes like you've been slaving away all day! Perfect for last minute guests or a speedy weeknight meal. Feel free to substitute the bison with our elk or wild boar sausage if that's what you have on hand.

Ingredients

4 Bison Italian sausage
1 tablespoon olive oil
16 -24oz potato gnocchi
1 cup heavy cream
¼ cup wine or broth( for deglazing)
4 cloves garlic, minced
1 small onion diced
1 tablespoon Italian seasoning
1 large can (around 28 oz) diced tomatoes with juice
1- 22oz jar tomato pasta sauce (2.75 cups)
4 cups fresh spinach
Salt, freshly ground coarse black pepper, and red pepper flakes (optional), to taste

Directions

Prep all your ingredients
Heat 1 tablespoon of olive oil over medium heat in a large, high-sided skillet.
Add the sausage to the skillet and cook for 5-8 minutes. Remove from the pan and set aside. Allow the sausage to cool slightly, and then slice it into rounds.
Add the onions to the same skillet and saute for approx. 5 min until it is starting to soften. Add the garlic and Italian seasoning and cook for another minute until fragrant. Deglaze the pan by adding a splash (¼ cup) of broth or wine scraping up any browned bits and all their yummy flavor off the bottom and stirring them into the onions.
Return the sausage to the pan with the diced tomatoes with their juice
Add uncooked potato gnocchi, heavy cream, and tomato sauce to the skillet
Stir well to combine, ten bring the mixture to a boil on medium heat, stirring everything well. Cover the skillet with a lid and allow the gnocchi to cook for 5 minutes while the sauce boils.
After the initial 5 minutes, introduce the fresh spinach and cook on medium heat, stirring frequently, for about 5 minutes until the spinach wilts to your liking. If you prefer a thicker sauce, cook it for a longer duration.
Still well to combine. Adjust the seasoning and enjoy. Top with parmesan, chopped parsley or basil and chilli flakes if you like.
