Ingredients

A rack of buffalo ribs
- Yellow mustard

Your favorite beef or big game seasoning
- Crème soda

1 stick of butter cut into slices

1 Jalapeno cut into slices
- Your favorite BBQ sauce
Directions
Remove the membrane. Sometimes it comes off really easy and sometimes it's a pain. Use a butter knife to get under the membrane, then use a paper towel to pull it off.
Next, slather the ribs with a coating of tangy yellow mustard, which will help the seasonings adhere and infuse the meat with a subtle kick. Season generously with your favorite beef or wild game seasoning.
Now it's time to fire up your smoker and let it preheat to 225-250 °F . Once you are up to temp, place the ribs on the smoker, bone side down. Smoke the ribs for three hours, allowing the smoky aromas to permeate the meat.
After three hours, put them in tinfoil with the crème soda, top with butter, and jalapeno slices. Wrap tightly and return to the smoker for another two hours allowing the crème soda and jalapeno to work their magic, infusing the ribs with a hint of sweetness and a touch of heat
Once the two hours are up, remove them from the tinfoil and put them back on the smoker.
Baste them with your favorite BBQ sauce and smoke for another hour letting the sauce caramelize and create a sticky, finger-licking glaze.
Remove from the smoker and rest for at least 5 minutes, letting the flavors settle and the juices redistribute. Serve with your favorite side (potato salad or macaroni salad is great).
