1 lb. ground Elk
- 2/3 cup yellow onion finely diced
- 2 cloves of minced garlic
- 1 cup ketchup
- 1 tbsp. apple cider vinegar
- 1/4 cup water
- 2 tbsp. brown sugar
- 1 tsp. chili powder
- 1 tsp. cumin
- 1/2 tsp. kosher salt
- 1 1/2 tsp. black pepper
Directions
- Heat a large pan over medium heat. Add a tablespoon of cooking oil to coat the bottom of the pan. Once the oil is heated, add the ground Elk and brown. Set aside.
After removing browned Elk from the pan, add another tablespoon of oil (if needed) and saute the onion until brown and soft (3-5 minutes). Add the minced garlic and cook one additional minute.
Add the water and apple cider vinegar to the pan and stir for one minute. Then add the ketchup, sugar and spices. Reduce heat to low and simmer the sauce until it thickens (a few minutes). Add the Elk meat back in and stir.
Serve on your favorite buns! We suggest a toasted brioche one.
