10 Strips Thin-Cut Bacon
- Kosher Salt & Pepper or your favorite BBQ rub
- ⅓ Cup Brown Sugar

⅓ Cup Bourbon Whiskey

⅓ Cup Apple Cider Vinegar

1 ½ Tsp Dijon Mustard (smooth or grainy)

Prepare the brown sugar bourbon glaze by whisking together all glaze ingredients in a small saucepan over medium heat.
- Bring the mixture to a boil, then reduce the heat to medium-low and simmer until the glaze is reduced by about half and starts to thicken. It will stick to the back of a spoon when it is ready.
- Preheat your grill for indirect cooking. Aim for a temperature of around 350°F (120°C).
Pat dry the wild boar tenderloins with paper towels and season them generously with kosher salt and freshly ground pepper.
- Lay out 5 strips of bacon, and lay one loin on it, brush with some of the glaze, then wrap the boar tenderloin fully with the bacon strips.
- Repeat the process with the remaining bacon and tenderloin.
- Alternatively, if you are feeling fancy, you can make a basket weave out of the bacon strips and then wrap the loin. You can either tuck in the ends of the bacon to secure it or use water-soaked toothpicks for extra security.
- Once the grill is preheated, place the bacon-wrapped tenderloins on the grill, away from direct heat. If you like your bacon more crispy, you can place them over direct heat for a few minutes on each side before moving to indirect heat. NOTE: Be mindful that this may decrease the overall amount of cooking time needed.
- Once the loins are over indirect heat, close the grill lid and cook the pork until the internal temperature reaches 135°F (57°C), which typically takes about 30 minutes.
Once the meat reaches 135°F, brush the bourbon glaze onto the wild boar tenderloins. Increase the temperature of the grill to medium-high.
Continue cooking, brushing on more glaze occasionally, until the internal temperature reaches 145°F (63°C) for medium-rare, or adjust according to your preferred level of doneness.
- Once done, remove the boar from the grill and let it rest for 10 to 15 minutes before slicing with a very sharp knife.
