These pre-formed patties are perfect for at-home smash burgers! Generally, a Smash Burger has American Cheese, fried onions and Ketchup. But the best buffalo burger is whatever you want it to be. Just don’t overload the burger, let the flavor of the ground Buffalo meat shine through. You’ll be pleased you did.
Ingredients
-
4 patties Bison Burger Meat
-
4 American cheese Slices
- Fried or pickled onions
- Ketchup
-
2 -4 Buns
Directions
Pull out your package of Bison patties, place on a plate and salt both sides, then let rest for about 20 minutes. Immediately before you cook them, roll each patty into a loose ball.
Warm up an 8-inch frying pan, use your animal fat or oil of choice (we used lard) to grease the pan, and set it to medium-high on your burner. This is the ideal bison cooking temperature. If you’re lucky enough to have a flat-top grill, you may certainly use that.
NOTE: The trick to the smash burger is to form your patties into a ball. Place the ball of ground bison in the center of the hot pan and press down with your spatula. This gives it an uneven edge that will get nice and crispy!
How long to cook bison burgers
Sear your bison patties until you see the brown from the bottom starting to creep through to the other side. Flip them and add your cheese at this point. Cook for about 30 seconds or so, then you can put it directly on your bun with toppings and enjoy.
Because these patties are only about 4-5 ounces, once pressed they cook relatively quickly.
