1lb ground buffalo meat
- 1 tbsp olive oil
- 1 package of taco seasoning
- 2 tbsp tomato paste
- ¼ cup water
- 1 bag tortilla chips
- 1 red pepper finely diced
- ½ red onion finely diced
- 1 avocado diced
- 2 cups (more if you like them really cheese) shredded cheese of choice
- Chopped cilantro or flat-leaf parsley for garnish
- 1 lime sliced into wedges
- Sour cream and salsa for serving

- 1 tsp chilli powder
- 3 tbsp sour cream
- 1 tsp garlic powder
- 2 tbsp cold water
- Salt and pepper to taste
- 1 handful of chopped fresh cilantro or flat-leaf parsley

**NOTE** The sky is the limit with toppings- add whatever you like, olives, lettuce, black beans, jalapeños, tomatoes, maybe you even have some left over Bison or Elk Sausages to chop up and throw on…anything goes!!

Combine all dressing ingredients in a blender or food processor and blend until smooth. You may need to add a little more water if it’s too thick. Transfer to a squeeze bottle if you have one. If not you can just spoon it over the nachos later.

Preheat Oven: Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil.
Add ground buffalo meat and cook until browned, breaking it apart with a spatula as you go.
- Stir in the taco seasoning, tomato paste, and water. Simmer for 5-7 minutes until the mixture thickens.

- Arrange the tortilla chips on a large baking sheet or an oven-safe dish.
- Evenly distribute the seasoned buffalo meat over the chips.
