Ingredients

For the nachos

1lb ground buffalo meat
1 tbsp olive oil
1 package of taco seasoning

1 med avocado pitted
2 limes juiced
1 tsp chilli powder
3 tbsp sour cream
1 tsp garlic powder
2 tbsp cold water
Salt and pepper to taste
1 handful of chopped fresh cilantro or flat-leaf parsley

Directions

For the dressing

Combine all dressing ingredients in a blender or food processor and blend until smooth. You may need to add a little more water if it’s too thick. Transfer to a squeeze bottle if you have one. If not you can just spoon it over the nachos later.

For the nachos

Preheat Oven: Preheat your oven to 375°F (190°C).
In a skillet over medium heat, add olive oil.
Add ground buffalo meat and cook until browned, breaking it apart with a spatula as you go.
Stir in the taco seasoning, tomato paste, and water. Simmer for 5-7 minutes until the mixture thickens.
Gather all your toppings and get ready to load them on!
Arrange the tortilla chips on a large baking sheet or an oven-safe dish.
Evenly distribute the seasoned buffalo meat over the chips.
Spread the shredded cheese over the entire nacho arrangement.
Place the baking sheet or dish in the preheated oven and bake for about 8-10 minutes, or until the cheese is melted and bubbly.
Sprinkle diced red pepper, red onion, and avocado evenly on top.
