This Ground Elk Burger Soup is quick and easy to make and a creative spin on a traditional soup recipe.
Ingredients

1lb Ground Elk Burger
- 4 Cups Spinach, packed tight
- 15.5oz White Hominy, washed
- 1/2 cup Orzo Pasta
- 4 Cups Beef Broth
- 1 Tablespoon Olive Oil
- 1 Teaspoon Cumin
- 1 Teaspoon Coriander
- 1/2 Teaspoon Kosher Salt
Directions
Heat a large stockpot over medium heat along with the olive oil
Add the ground elk burger cooking until browned
When the meat is cooked, add in the hominy and stir in the cumin, coriander, and salt
Add the spinach to the pot and continue stirring until the spinach becomes wilted from the heat
Add the Orzo pasta along with the beef broth and stir.
Place a lid over the stockpot and reduce heat to low
Cook until the pasta is ready
Garnish with shredded cheese if desired
Recipe Note
You can also do this in the slow cooker by browning the meat in a pan first then adding all other ingredients to a slow cooker and cooking for 6 hrs on low or 3 on high.
