This Ground Elk Burger Soup is quick and easy to make and a creative spin on a traditional soup recipe.

1lb Ground Elk Burger
4 Cups Spinach, packed tight
15.5oz White Hominy, washed
1/2 cup Orzo Pasta
4 Cups Beef Broth
1 Tablespoon Olive Oil
1 Teaspoon Cumin
1 Teaspoon Coriander
1/2 Teaspoon Kosher Salt

Cooking Directions:
Heat a large stockpot over medium heat along with the olive oil. Add the ground elk burger cooking until browned. When the meat is cooked, add in the hominy and stir in the cumin, coriander, and salt. Add the spinach to the pot and continue stirring until the spinach becomes wilted from the heat. Add the Orzo pasta along with the beef broth and stir. Place a lid over the stockpot and reduce heat to low. Cook until the pasta is ready.
Garnish with shredded cheese if desired.

Made this soup using ground bison and we really liked it. Definitely going to make this again. Just wondering why you didn’t post the nutritional information? Nowadays that’s a must have. Keep the recipes coming!
